There’s something about winter that makes us want to slow down and spend a little more time in the kitchen. The days are cooler, the evenings feel cosier, and suddenly, a warm meal shared around the table is exactly where we want to be.
This season, we’re embracing comfort food in all forms with a creamy chicken and orzo recipe that’s hearty, full of flavour and made for sharing. Creamy chicken & Orzo
Rich, creamy and satisfying, this one-pot chicken and orzo is everything a winter meal should be. Best of all, it comes together in one pot, making it an easy choice for relaxed entertaining or a comforting family dinner.
Ingredients
- 4 - 6 chicken thighs, bone-in or boneless
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1½ cups orzo
- 3 cups chicken stock
- 1 cup fresh cream
- ½ cup grated Parmesan, plus extra for serving
- 2 cups baby spinach
- 1 teaspoon dried Italian herbs
- Salt and freshly ground black pepper, to taste
- Fresh parsley, to garnish
- Lemon wedges, to serve
Method
Season the chicken generously with salt, pepper and Italian herbs. Heat the olive oil in your Cast Iron braiser over medium heat and sear the chicken until golden brown on both sides. Remove it from the pot and set aside.
Add the butter and onion to the same pot and cook until softened. Stir in the garlic and cook for another minute before adding the orzo. Stir briefly, allowing the orzo to coat in all those flavours left behind from the chicken.
Pour in the chicken stock and cream, stirring well to combine. Return the chicken to the pot and allow everything to simmer gently until the orzo is tender and the chicken is cooked through. Stir occasionally to prevent the orzo from sticking, adding a little extra stock if needed.
Finish with the Parmesan and baby spinach, stirring until the spinach has wilted and the sauce is beautifully creamy. Garnish with fresh parsley, an extra sprinkle of Parmesan and a squeeze of lemon before serving.
