Simple and Soul-Warming Chicken Soup Recipe

Whether you're looking to comfort, nourish, or simply indulge, let the humble bowl of soup be your canvas this season.

 

Ingredients:

1 Whole Roast Chicken (store bought or roasted at home)

2 Tbsp Olive oil

2 Carrots, diced

2 Celery stalks, diced

1 Onion, chopped

2 Cloves garlic, minced

6 Cups chicken stock or water

2 Tsp Dried mixed herbs

2 Bay leaves

3 Medium baby marrows / zucchini, diced

½ Cup Frozen peas

Salt

Freshly ground black pepper

Optional: ½ Cup noodles, pasta or rice

 

Method:

  1. If you are not using a store-bought rotisserie chicken, start by roasting the chicken.

 

  1. Sauté vegetables: In a 5-litre pot, heat your olive oil and the mire poix mix (onions, carrots and celery). Cook until soft, then stir in the garlic. Add dried herbs, pepper and bay leaves.

 

  1. Simmer: Add the roast chicken to the pot and add stock / water so that it covers the chicken. Cover the pot and bring to a boil, reduce heat, and then simmer for 30-40 minutes.

 

  1. Add additional vegetables: Add peas and baby marrows and cook for a further 10 minutes.

 

  1. Shred Chicken: Remove the whole chicken from the pot, shred and return only the shredded chicken meat to the soup pot.

 

  1. Add noodles, pasta or rice (if using): Cook according to the time indicated on the package instructions.

 

  1. Test: Give your soup one last taste and add seasoning if necessary.

 

  1. Enjoy: Serve your soul-warming chicken soup hot, with your favourite garnishes and slices of bread.
